Welcome to February’s AK Cookbook Club! I’m so glad you’re here. A few reminders:
On the first Wednesday of each month I’ll announce a new cookbook recipe from my cookbook that we’ll all get to make during the month. No recipes are off-limits, so get ready to cook and bake every month with me for an entire year! Think of it as a fun little challenge you can do with family & friends, or solo (because you’re ambitious like that!)

February’s recipe: Marry Me Ropa Vieja
Everyone turn to page 203 of my cookbook and get ready to make the most tender, flavorful braised beef dish that’s SO versatile. This meal is:
- Inspired by my Puerto Rican nana (it’s her take on traditional ropa vieja!) We actually served it as part of our family-style wedding dinner and all of our guests RAVED about it.
- Incredibly easy to make even if you don’t cook beef very often!
- Absolutely delicious served with tortillas, cooked rice or Arroz Con Gandules (page 218 of my cookbook), Crispy Fried Tostones (page 211), and more.
